CREAMY TOMATO SOUP

A creamy and quick tomato soup recipe, ready in 20 minutes: prepared with sun-dried tomatoes and garnished with fresh oregano, it’s tasty and easy to make.

Tomato—— 550 g, sun-dried, chopped oil-packed, drain and reserve the oil

Tomato juice ——————————————— 450 ml

Whipping cream ———————————— 450 ml, haevy

Salt ————————————————– to taste

Pepper ———————————– freshly ground, to taste

Oregano —————————————— 1 tbsp, fresh

HOW TO MAKE A QUICK TOMATO SOUP

To prepare a creamy and quick tomato soup recipe first puree the sun-dried tomatoes in the bowl of a food processor.

Add half of the tomato juice and puree until smooth.

In a large saucepan, combine remaining tomato juice with the pureed mixture; bring mixture to a boil, stirring frequently.

Remove from heat and add cream; season to taste with salt and pepper.

Return to burner, cook over low heat until heated thorough, do not boil.

Ladle into serving bowls, garnish the creamy tomato soup with fresh oregano and a drizzle of the reserved sun-dried tomato oil.
